Soramame Somen
Broad bean paste……30 g
Surimi……………………50 g

Golden clams (made from clam)
Clam………………………70 g
Potato starch powder…as needed
Egg yolk…………………as needed

Snow beans (made from broad beans)
Broad beans………3 pcs
Sugar………………as needed
Agar…………………as needed
Meringue…………as needed

How to make

1. To make the soramame somen, mix the surimi with the broad bean paste, taste the flavour and adjust seasoning if necessary. Add flour, then make into somen noodles. Cook the noodles in boiling kombu dashi, then cool in running cold water.

2. Boil the golden clams, cover with potato starch powder, boil again and dip in egg yolk then chill.

3. To make the snow beans, boil the broad beans with sugar. Make meringue, add agar to the meringue, adjust the taste then dip the broad beans in the meringue. Leave to solidify.
Story
The golden clam jelly gives an image of the ice that remains in the winter-to-spring transition. To express the rough texture of the ice, agar is used instead of gelatin to give a more solid appearance to the jelly.
